 Celebrate the Fungi: Shiitake Mushroom & Vegetable Omelette


       A symbol of longevity in Asia, Shiitake mushrooms have been implemented into Chinese medicine for more than 6,000 years because of their immense healing properties and health benefits. Many individuals have Shiitake logs for personal use, as they're incredibly easy to grow and are as convenient as anything. Toss them into a dinner-time stir fry or morning omelette for a rich, smoky addition to your meal. The options are as numerous as the benefits are endless!

Ingredients:
1 cup Shiitake Mushrooms, peeled
2 eggs, cracked & whipped
1/2 cup zucchini, chopped
1/2 cup yellow onion, chopped
Olive Oil Spray or butter
A pinch of Pepper, Salt, and/or Garnish (optional)

Directions: (serves 1-2 individuals; prep time: 10-12 minutes)
       First, chop the onion & zucchini and peel the Shiitakes. Then spray your frying pan with olive oil spray or melt a bit of butter before frying the vegetables & mushrooms on 'medium heat.' When they are near to being cooked, put them aside on 'low heat' and focus your attention to the egg base. To do this, you'll want to situate your flat frying pan on medium (as to not overcook your eggs). Butter or olive oil spray your pan. Crack two eggs (with or without the yolks; your preference) into a small dish and stir them quickly, using a fork, until you have an even yellow appearance all around. Then, pour your eggs into the pan and let it sit until you can clearly see an egg base harden. When the egg is cooked halfway to 3/4 the way through, carefully flip your omelette (using a spatula or fork) as to cook the other side. When the egg is completely cooked, place it on a plate and pour your vegetables and mushrooms on top. Fold over half the egg as to completely cover the vegetable filling, sprinkle some pepper, salt, or garnish on top, and enjoy!
