Brighten Your Brunch: Festive Egg Whites

       We can all scramble some eggs and call it a 'brunch,' but can we separate the yolks, throw in some earth, and make our food look, smell, and taste like the holidays? Yes - yes we can! And here is how: begin sauteing some chopped onions and red bell peppers in a pan on 'low.' After a couple minutes (aka: your kitchen smells like heaven), set the veggies aside and pour some egg whites (or eggs with the yolk - your choice) into a separate pan, on 'medium.' Using a spatula or wooden spoon, pull the egg from the sides into a light, fluffy scramble until cooked as well as you prefer. Then, toss in some baby spinach, only cooking it for a minute or two with the eggs (some nutrition and good bacteria is lost in the cooking process, so try not to have the leaves on the stove for too long). When the situation is to your liking, place the eggs on one side of your favorite plate and the saute'd veggies on the other. And voila! 
       In just under seven minutes, you have a brilliant aura in your kitchen, blissful meal on your table, and soon-to-be energy-filled self. What could be better? Give the earth & your body the appreciation it deserves with this nutrient-dense, quick & easy brunch. Pair it with some coffee or hot tea, and you've got yourself a beautiful start to the day!
