Warm up Winter: Red Bell Pepper & Tomato Bisque

       What's better than warm soup in the winter? Especially when Portland rain has been as frequent as it is, we definitely need something toasty to warm us from the inside-out. So, here it is. Just when you think the traditional tomato soup couldn't be more brilliant, this soup comes along. It is a delectable blend of roasted red peppers, red tomatoes, garlic, yellow onion, and (to top it off) parsley leaves. Adding a bit of butter, milk, or milk alternative (like almond, coconut, or cashew milk) to 'creamy' the situation up is always an option. Don't be afraid to experiment with this bad boy. And, man, will you feel good after indulging in this. After all, you are getting the benefits of all these glorious vegetables, spoonful by spoonful. 
       The red bell peppers, specifically, contain the most Vitamin C out of all pepper colors. They are also loaded with beta-carotene, antioxidants, and anti-inflammatory properties. Tomatoes, as well, are an excellent source of Vitamin C. Additionally, they contain biotin (which is wonderful for your metabolism as well as hair and nail growth), molybdenum, Vitamin K, E, & A, potassium, dietary fiber, Vitamin B6, and much more. You can never go wrong with a tomato. Garlic is used in many cultural dishes and has been cooked with since the beginning of time for its health and medicinal properties. (In other words, trust your ancestors; they're wise folk.) Garlic is in the onion family - which, onions are also one of those trusty and widely-used ingredients that anyone, everywhere, has used. Onions heighten immunity with the use of many phytochemicals, which improve the working of Vitamin C in the body. They also contain chromium, which regulates blood sugar. Not only are onions beautiful and beneficial, but they also add fantastic flavor to any dish, such as this. Lastly, parsley leaves support the kidneys, tones bones, and heals the nervous system due to its Vitamin C, B12, K, and A properties. And, well, its incredibly photogenic, if I do say so myself. So, what are you waiting for? Make this your next afternoon meal and your body will thank you!
