Avocado Egg Bake
You may wonder where I find the energy to have a full-time job, run a film photography business, pursue a pen & fiber art gig, tend to a family farm, and maintain this alternative food blog. Well! The answer is avocado. This Paleo-friendly dish requires just a few ingredients and nearly no prep time. In addition to that, it is also high in healthy fats & protein, loaded with omega-3s, and kickin' with fiber. Fix it for breakfast to start your day right or for lunch to help you power through your afternoon.
To begin, preheat your oven to 425 degrees. Then, slice your avocado in half (long-ways) and take out the pit. *Click HERE to learn how to grow your own avocado tree from the pit! Using a spoon, scoop out a bit of avocado from the halves to allow space for the egg. Then, place the avocados in a small baking dish with the hollows facing upwards. Crack two eggs, allowing the yolks to enter into each avocado half first, then fill the rest of the hollow with the whites. Finally, place the halves in the oven and bake for about 10-15 minutes. When the egg is baked to your liking, take those babies out of the oven and season 'em up with sauteed onions, chives, and a dash of salt & pepper. Now looky here; you've got yourself what I like to call "a satisfier," my friend.

1 ripe avocado, halved & pitted
2 eggs
1/2 cup onions
1/2 cup onions
1 tablespoon chopped chives
